Welcome and thank you for investigating our Catering Page.  Each event we serve is unique to patrons’ taste and requirement; therefore you will not find a fast-food-menu on my website.  You will not find a menu by design. A good cook takes pride in his vocation and firmly believes that in order to live well; you must eat well.

I relocated my family to the Raleigh and made this our home after taking a position at the Capital City Club.  By the way when Capital City Club advertises for a Chef; they advertise for an “Artist” not a cook or a chef.

I have over 30 years of real world culinary experience:

  • La Fromagerie, Rumson, NJ
  • Executive Chef at Whispers Restaurant , Spring Lake, NJ
  • Capital City Club, Raleigh, NC
  • 1st Executive chef of Tir  na nOg Irish Pub, Raleigh, NC (many of Dan’s entrees are still staples on their menu)

I have been contacted twice by Bon Appetite magazine for recipes that I created; the Roasted Eggplant soup and the Irish Beef Boxty.
